One of my favorites is William G. Perry, Forms of Intellectual and Ethical Development in the College Years: A Scheme (Holt, Rinehart & Winston, 1970. Various people have worked with Perry's scheme since he developed it. You should be able to track them through PsycInfo. Perry outlines nine stages that begin with dualism and end with an orientation in commitment. There's a wonderful chart at the end of the book that summarizes it all. Nearly 30 years ago I applied the scheme to religious development as well, and found it very helpful.
