a recipe using citron

Does anyone have a recipe using Citron--the fruit? Not lemon or lime.

I've got a recipe in my Betty Crocker Holiday Desserts book for an adaptation of a German cookie called Lebkuchen.

It calls for citron.

As I'm at work, I don't have the recipe available to send you, but if you want it let me know and I'll forward it tonight.

I don't have a written recipe but I do have some information from an elderly aunt which can likely be adapted. First of all she said to keep the citron from going soft, soak overnight( or at LEAST 2 hrs.) in 1 tbsp salt to 1 gallon of water. Drain, rinse, and use in your recipe. For preserves you can use lemons and oranges; ginger; or pineapple. Cook your ingredients with water and sugar(to your liking) till tender and then process in jars. I usually put some in the fridge and just put the rest in sterilized jars.(I know you're not supposed to that, but, oh well.)
