CANNING MEAT?

I was at the feed store and there were a couple old gentlemen talking about putting meat in jars and covering it in lard.   Does any one remember their grandparents doing this and how is it done? Is it raw meat or cooked? I would guess it would be cooked.

according to one of the FOXFIRE books, its cooked meat,, but it isnt canned. Just sealed from the air with the lard.no air,, no bacteria (thats the idea),,I know of 2 people that still do that method

Tiller, it's not recommended to do it this way anymore. Meat needs to be pressure canned now.

My Grandmother always cooked sausage patties, put them in a crock, covered with a layer of fat, let harden, repeat until crock was full. All meat was totally covered in the fat (lard) The crock was then stored in the cellar and meat and lard taken out as needed. It doesn't sound safe to me but she lived that way her whole 92 years and it never hurt her. Joanie
