Pumpkin Spice Cookie Recipe

Here a good fall cookie- I hope you enjoy them.

PUMPKIN SPICE COOKIES-makes 4-5 dz good size cookies INGREDIENTS: 1 c. butter,margarine or shortening (I use butter) 3 c. white sugar 2 lg eggs 2 c. pumpkin 1 Tblsp. vanilla 5. c flour 2 tsp. Baking Powder 2 tsp. baking soda 1 tsp. salt 2 tsp. cinnamon 1 tsp. ginger 1/2 tsp. nutmeg if desired ( I don't like nutmeg so I don't use it) DIRECTIONS: Preheat Oven to 375 Cream butter & sugar Add eggs,pumpkin & vanilla; mix well. Add flour that's been mixed with remaining dry ingredients. Beat Well and drop by rounded teaspoonsfull on greased sheets. Bake 10-12 min Frost with any desired icing or glaze with the following: 2c. Powdered sugar, 4 Tblsp Milk 4 tsp grated Orange Peel dash of Cinnamon Mix well

Stan, I get a 5cent per recipe commision. LOL Share it with all to enjoy- I found it in 1972 in a Land o Lakes butter cookbook back when you sent in a butter label and they sent you a cookbook. Oh those were the days.:)

I'm gowing some winter squash that are suppose to better than pumpkin for making pumpkin pies (we will see if that is true) have you ever heard of using them (sweet winter squash) intead of pumpkin?

Kathy,, when you say "good size cookie",, what does thta mean>? chip ahoy size?? or are we talking about 12 in diameter?

I've used pureed butternut squash-I put it in the Vita Mix-no more stringy squash.:) Just make sure you don't have a watery squash, it needs to be as 'dry' as canned pumpkin to work. The cookies are more orange in color but otherwise I like their flavor but I like squash pie in place of pumpkin pie. You can halve this recipe quite nicely, it might be a good idea if you try it with squash. Stan, I figure they are about 4-5 inch size but you can make them bigger by using a tablespoon or smaller by not heaping the spoon. Most of my recipes have been re-wrote over the years into my current recipe book and since I'm the only cook in the family I don't put things like that down-I probably should though- the next generation may not understand my directions otherwise. I have my grandmothers handwritten recipe book and some recipes in there don't even have a Heading, so you have to read through the ingredients to try & figure out if you're making a cake or cookies.:0)

I made some last night and they were good. Kind of like a mild pumpkin pie. My pumpkin WAS a little juicy (no quality control with fresh veggies!) but they still turned out well. They are just a soft cooky instead of a crunchy cookie.
