Extension Tubes and Canon Lenses

Can you use extension tubes with any Canon lenses? If so, does this mean that the lens will then be capable of macro work?

Yes and yes but if you plan to really go for macro no extension tube will do. Neither in magnification nor in image quality. What you need is a macro lens. The 100/2.8 and the 180/3.5 are the best in terms of convenient working distance. the 50/2.5 is also capable of 1:1 but you'll have to be very close to your subject. This is both intimidating and causes lightning problems. A dedicated flash is also recommended.
