HEALTHY MIRACLE MUFFINS

2 cups bran
1 cup oatmeal
2 1/2 cups flour
2 Tbsp. plus 2 tsp. baking powder
2 tsp. baking soda
2 tsp. cinnamon
1 1/2 tsp. cloves
1 tsp. salt
3 cups walnuts, chopped
1 cup yellow raisins
2 cups dark raisins
1 cup butter
1 1/2 cup molasses
4 eggs
2 cups milk, soured with 2 Tbsp. vinegar
Sesame and sunflower seeds for topping

Plump raisins and drain. Combine all dry ingredients, drained raisins and walnuts. Combine cold butter and flour in food processor. Process to a mealy texture. Beat eggs, milk and molasses together. Combine wet and dry ingredients; mound in paper lined muffin tins. Sprinkle with raw sesame and sunflower seeds. Bake in a 375 degree oven for 30 minutes. Makes 24 Texas size muffins or for 60 mini size muffins, bake 20 minutes.

I need to make muffins with as little cholestral as possible. how can I alter the butter in this receipe for say Becel oil.I would also be using break-free natural egg. Thanks

For replacing the eggs, add liquid egg as it measures on the carton. ie 1 egg equals 2 tbsps. of liquid egg substitute. As for the becil, just omit the butter and add oil, but less milk.
