Buncha morels

Crappy year so far here in WestCentral Indiana. Maybe this warm rain will help. Anyway, we like to dry them and give them as presents (worth lotsa $$ per pound!) and use them in soups & stews in the winter. Great flavor!! But, yes, you can freeze them. Clean them, slice them, soak them to remove bugs and dirt, dry them (a salad spinner works well to remove excess water) and put them on a baking sheet ONE LAYER DEEP. Quick freeze! Pop off the sheet and put into a freezer bag. When you fry them DON'T thaw them. Merely flour them and then fry them AS FROZEN. Happy Eating!!

Not a good year in East Central IN, either. Yes, freeze them. We've fried and then frozen and frozen them, single-layered on a cookie sheet, unfloured but cleaned. Both ways work and, as you've been told, work best unfrozen before cooking. Lucky you!
