What is your favorite salad to take to a Funeral dinner?

I always help with funeral dinners at our church. I was wondering what some favorite salads you all might have that are healthy and yummy. I've got a funeral this week and we need to serve 50. I just need to bring a salad that serves 10-15, though.

Here is one of my favorites and it's easy to make!

Macaroni salad

1 lb. med. macaroni shells (cooked)
Chicken (sm. can, tuna size)
mixed frozen veg., 10 oz. (thaw under running water)
6 hard boiled eggs (chopped)
1/2 cup chopped celery
Mayonaise

Mix all of the above and add the mayo. to your own liking.

Sorry Melissa, Yes this is my real email, wonder what's wrong???? I don't know why it won't accept it. A girlfriend from Montana sent an email yesterday and it came through ok. I am kinda computer dumb, so I don't know how to check to see if anything is wrong? I sure don't want to take up your valuable time to fool with me, but sure miss your forum.

I like to take those spiral pasta things (of which I can NEVER remember the name) cooked until tender and then add cut up things like cukes, peppers, onions, tomatoes, peas(cooked and chilled) radishes, and toss it all together with some parmesan cheese and ranch type dressing. It always goes over really big.

I like to take a salad like Diane mentioned, but now people like my potato salad, so sometimes I take that. If I have time I make the potato, if I'm in a hurry I do the pasta. Another thing I like to take is Banana pudding-its easy to do, but I also think it is like the ultimate comfort food, sweet, creamy with cookies-its a good thing.
