Need ideas for horseradish & currants

I was mowing the other day & noticed that our horseradish plant is coming up fast, fast....and our currant bushes have SO many blossoms on them.

My questions is:

Does anyone have any recipes or ideas for canning/freezing/drying, etc....horseradish or currants?

Our horseradish plant is several years old & does really well, but we have never used it much.

We have 2 currant bushes (one white, one red) and have never used them. They are also several years old. I hate to see the berries go to waste. Can I use the berries interchangeably in recipes/jams (red & white)?

Dearest Heather-------horseradish & currents don't go well together!! ha!!

Heather-----of the horseradish-----we use to dig up the roots & we ground them---I didn't know you could do anything with the plant---we just ground the roots----

We used a metal /clamp to the table/ type meat grinder-----& ground the roots- talk about strong-----------------we would cry & cry while we ground it----& DON'T WIPE YOUR EYES while you are doing it------

when we ground it up--then if it was a little dry/ we mixed a little vinegar with it---then we bottled it & kept it in the ref----I think it must keep forever---- plus how would you know if it went bad!!! ha!!!!

Currents put them in scones-----they are wonderful!!!!!!! Use them fresh-----then if you have more than you can use---dry them--they are wonderful!!!!!! You can use them in muffins---etc/etc/etc/--my family's favorite is homemade scones with currents & oatmeal---in them.

When I want /what most people call their "comfort foods"---I open a can of beans---& put horseradish with them----enough to make it burn up into you nose & make your eyes tear up------& dip this with potato chips----

When we have a death in the family---or something really gone wrong--- -hubby gets me horse radish & beans & potato chips---& I start feeling better----I know I'm weird---but most all of you knew that anyway!!!!ha!--Sonda

beans and horseradish mixed. And you dip potato chips? I have NEVER heard of this...

Makes me want to try it though!!!!!!! LOL.

Cureent jelly is delicious. Sure there's a recipe on the Sure'Jel pak or any good canning book.

Diane----for me it is old cold pork'n beans---not heated straight out of the can--with the pork removed if not vegetarain brand--as I'm a veggie----& then mix the horse radish with them & then use the potato chips to dip with-------are ya converted?????? ha!!--later sonda
