Luby's carrot cake

3 lg eggs, 1 1/2 cups granulated sugar, 1 1/3 cups drained canned crushed pineapple, 1 1/3 cups finely chopped or shredded carrots, 1 cup veg, oil, 1/2 cup pecan pieces, 1 1/2 teas. baking powder, 1 teas. baking soda, 1 teas. ground cinnamon, 1 teas. vanilla, 2 1/2 cups all purpose flour.

Heat oven to 350, Lightly grease two 9 inch round cake pans,

For cake, in lg. bowl, beat together eggs and sugar until blended. Add pineapple, carrots , oil, pecans, baking powder, baking soda, cinnamon, and vanilla. beat till well blended, Add flour, mix just untill well blended.pour into pans

Bake for 30 mins or until wooden pick inserted in center comes out clean, Cool on wire cooling racks.

Icing, 1 cup butter, 1 pd. powdered sugar, 4 ounces cream cheese, softened. 1/2 teas vanilla, Pecans and finely chopped carrots,

For icing, in med. bowl, beat together butter and sugar until creamy. Add cream cheese and vanilla, Beat until smooth and creamy. Ice and fill cake. Garnish with pecans and carrots.
