Answers

Just go back to the store, and get the right manual.

Trying pushing the little star button by your right thumb while turning the wheel.

Actually, it's the one that says "A/V." Push and hold it while turning the dial.

Try this and the rest of the site: http://www.frognet.net/~mcfadden/img/camera_manuals/xs31.jpg

What is a EOS Rebel X 2000?

There was the Rebel X and there is the Rebel 2000. They're two different cameras.

I don't know if they handle aperture changes in manual mode any differently (I thought it involved pressing the * on the camera back while turning the command dial) but it'd be good to know which camera you have when you go to the store to get the right manual.
