Duck egg recipes, any favorites? : LUSENET : Cooking & Crafts : One Thread

I would like any of your favorite recipes for using duck eggs. I use them in place of chicken eggs and like the results. Thanks, LQ

I have never had duck eggs. Do they taste the same as a chicken egg? One duck egg would equal how many chicken eggs?

Little Quacker, I don't have a favorite recipe, but I use my duck eggs the same way I use my chicken eggs. I think they are great too.

I'm with you, LQ. My first choice for any type of baking is a duck egg. The chicken eggs are eaten for breakfast. But, I've actually come to prefer duck eggs for baking--not any particular recipe, just anytime they're available. Everything rises beautifully!

Hi Karen, duck eggs come in many sizes, I have bantam ducks and Indian Runners. The bantams have eggs the size of bantam chicken eggs, I use two of them when it calls for one large chicken egg. The Indian Runners lay quite large eggs but don't need to adjust the liqued in the recipe as the whites of duck eggs are firmer than chicken eggs. I usually add a tsp of water to each duck egg used to allow for that. Otherwise, just go by volume like you would chicken eggs. Ahhh spring, I have eleven new ducklings! LOL LQ

hI, wE USE ALL OUR DUCK EGGS FOR BAKING My fATHER-iN-lAW told me they were great and He was right. I make Easter Bread every year for all the Family. The Duck Eggs make it so moist. My customers are always buying both Duck and Chicken eggs from us. Have a Great Day
