Recipe for Lamb Stew? : LUSENET : Cooking & Crafts : One Thread

I am looking for a recipe for Lamb stew that you enjoy, preferably one that you could put in a crockpot. If you have any, I would appreciate it. Thank you!!

1 1/2 lbs boneless lean lamb stew meat, cut in 1 inch cubes
1 teaspoon salt, divided
1/2 teaspoon pepper
1/4 cup all-purpose flour
2 teaspoons olive oil
1/2 teaspoon thyme
1 teaspoon rosemary, crushed
1 large onion, sliced thin
2 cups water
1 cup baby carrots (1/2 pound or as many as you want)
2 cups diced potatoes
1 cup frozen peas, thawed

Sprinkle lamb with 1/2 t salt and the pepper. Coat with flour. Heat oil in a 2 to 3 quart Dutch oven over medium-high heat. Brown lamb a few pieces at a time in the hot oil. Remove to crock pot with slotted spoon. Reduce heat to medium. Add onion and cook 3 to 4 minutes, stirring occasionally until lightly browned. Stir in the water scraping up browned bits on bottom of pot. Transfer onion mixture to the crock pot; add carrots and potatoes. Cover and cook on low for 8 to 10 hours, adding peas during the last 30 to 45 minutes. You can also simmered this in the Dutch oven on the stove for 1 1/2 to 2 hours.

Greek Lamb

take any cut of lamb and place in a roasting pan (crock pot will work as easily as cooking this on top of the stove, placed inside a BBQ or in a fire pit in a ducth oven)

quarter potatos around the meat, add garlic (doesn't matter if the cloves are whole, chopped, minced your preference), add oregano (fresh, dried, still on the stem - cause I am too lazy to strip it off but remove it before serving), pour over tomato sauce (you can also add stewed tomatos), pour over some orange juice (about as much as you would get from an orange) and a few large dashes of cinnamon. Bake or simmer 20 minutes per pound of meat, unless you use the crockpot then it is 5-6 hours.

*I made lamb once by following some recipe book I had...swore I would never eat it again. Told a greek lady friend at work about my experience and she told me how to make it minus the orange juice and cinnamon. Then I met and became friends with a Greek Cheif, when I told him about my friends recipe he said, always add orange juice and cinnamon. At first being skeptical I added a dash of add several dashes of cinnamon!
