FRUIT PUDDING1 egg
1/4 cup sugar
3 T cornstarch
dash salt
2 C milk
1 T margarine or butter (omit if using goat milk:)
1 t vanilla
2 cups(or 1 can) canned fruit cocktail, drained
Beat egg in saucepan. Stir in sugar, cornstarch, and salt. Stir in milk. Cook and stir over medium heat until thickened(or beginning to boil). Cook and stir a minute longer. Stir in margarine and vanilla. Add fruit. Cool. (I sit pan in sink of cold water for about 30 minutes, stir, and refrigerate.)
We use this same recipe for a very tasty vanilla pudding, omitting the fruit cocktail.
We family-size the recipe by multiplying everything by six except the salt(still a dash;), and the cornstarch--I use a cup.
