Recipe of the Day - Ham and Sausage Jambalaya

Ham & Sausage Jambalaya

2 large yellow onions, chopped
1 large green bell pepper, chopped
1 cup chopped celery
4 cloves garlic, minced
3 tablespoons bacon dippings
1 pound smoked sausage, sliced 1/2 inch thick
1/2 cup tomato sauce
4 medium tomatoes, peeled and chopped
3/4 pound ham, cut into large cubes
1/2 teaspoon Tabasco or other Lousiana hot sauce
2 bay leaves
1/2 teaspoon dried thyme, crumbled
1/4 teaspoon basil
1/4 teaspoon paprika
1 1/2 teaspoons cayenne pepper
1/4 teaspoon whole allspice
4 cups chicken broth
1 1/2 cups uncooked long-grain rice

In a large, heavy pot over medium heat, saute onions, bell pepper, celery and garlic in bacon drippings. Add sausage and cook, stirring occasionally, until vegetables are tender, about 8 to 10 minutes. Add tomato sauce, tomatoes, ham,Tabasco, and spices. Simmer, uncovered, for 15 minutes. Add chicken broth, bring to a quick boil and add rice. Cover pot and reduce heat. Simmer 15 minutes. if necessary, add more broth or water and cook until rice is tender. 6 to 8 servings

I've missed you guys! Things have been so hectic around here, I've barely had time to read, much less answer anything!

I have been LOOKING for a good jambalaya recipe, and this one will be eaten at our house - probably tomorrow, since Lance is working tonight! Thanks!
