Recipe of the Day - Jazzed Up Mashed Potatoes : LUSENET : Cooking & Crafts : One Thread

These can be made hours before you need them or the day before

6 large potatoes
1 stick of butter or margarine
1/4 cup milk
1 cup sour cream
1 cup shredded cheese
3 T. chives
1/4 cup bacon bits or crumbled bacon

Mash potatoes with the butter and milk. Stir in the rest of the ingrediants and put into a casserole dish and cover. When your ready to serve, top with some extra cheese and bake at 350 degrees until they are hot all the way through. These are very good!

I make potatoes similar to these. One other variety I make has crumbled cornflakes on top. I crumble them and toss with parmessan cheese and shredded butter (hard butter using a cheese shredder). Sprinkle this over the mashed potatoes that have been put in a cake pan and bake until golden. Tastes really yummy. I serve it with meals that wont have gravy...doesn't need any!!

My mother-in-laws family has a version of this but, they call it "German Potato Salad"

6 to 8 Large potatoes boil and mash add a few spoons of butter and enough milk to make creamy 3/4 cup of mayo 1 packet Hidden Valley Ranch seasoning 2 cups Velveta 1/2 cup on top and 1 1/2 mixed in 1/2 cup of bacon bits (it's better with real bacon bit's you make yourself) mix in and put some on top 1/4 cup black olives opitional add in or garnish on top chives are also optional, it just depends on your taste Mix in your favorite seasoning. I use salt, pepper and garlic powder mix in a casserole dish and bake at 350 untill hot and cheese is melted. Don't worry about exact messurement, add to taste. This is a wonderful holiday dish, I hope you enjoy it as much as our family
