Alison, here's the recipe/Chicken Noodle Soup

Homemade Chicken and Noodle Soup from The Breadman's Healthy Sandwich Book by George Burnett--Morrow
2# chicken thighs or legs
2# backs
1 large onion, chopped
2 med carrots, chpd
2 celery ribs, sliced
10c. water
1/2t dried thyme
1/2t marjoram
1 bay leaf
1/4c chpd fresh parsley-I used dried
sea salt
Freshly ground pepper
4 oz whole-grain noodles I made whole wheat
1c fresh green beans cut into 3/4in pieces(I didn't use)

Spray a large pot with nonstick cooking spray. Lay chicken, skin side down in pot and cook over med heat for about 5 min or til skin browns. Turn and cook 5 more min. Put chicken in plate. Pour off all but 1 T of fat.
Add onion, carrots and clery to pot, cover and cook for til soften. Put chicken in pot and add water. Bring to boil over high heat, skim off foam. Reduce heat to low, add herbs and salt to pepper to taste. Simmer 45 min til chicken is tender.
Take meat off bones, coarsely chop.
Remove soup from heat and let stand 5 min. Skim fat. Return to simmer. Stir in meat, noodles and green beans, cook for 8 min til noodles are tender. Adjust seasoning, discard bay leaf Enjoy!
