Jerusalem Artichokes

greenspun.com : LUSENET : Country Families : One Thread

Someone asked about Jerusalem artichokes. They are tubers that look like potatoes, and taste like sunflower seeds. Plant them in the fall, they grow very tall and look like small sunflower daisies. Harvest after first heavy frost, or leave in ground and dig as needed as long as ground is not frozen. Or leave in ground to grow next season, usually some left behind anyway.

There's more info and a recipe or two in the CS archives. Or there should be.
