Lubys Chicken Fried steak

3 Large eggs, 1 cup milk 1 teas.salt 1 teas.seasoned salt 1/2 teas. pepper 3 cups all purpose flour 2 1/2 pds round steak cut into 1/2 inch thickness, in 8 pieces.

In shallow bowl, whisk together eggs, milk, salt, seasoned salt, and pepper until well blended. Place flour in separate shallow bowl. Pound meat with meat mallet to 1/4 inch thickness. Coat with flour, shaking off excess. Dip into egg mixture, then again into flour. coating evenly. Heat about 1/8 inch of oil in skillet over med. heat. Add meat and cook 4 mins on each side, or until browned and cooked through. you can make a gravy of your likeing to pour on top if you wish,

I love their chicken fried steak too. I think that the trick to getting that great coating is dipping in the flour, then egg mixture, then the flour again. I'll certainly be printing this recipe out.
