freezing eggs in shell

i know it is recommended that eggs not be frozen in the shell. does any body know why they should not be? what happens. i had a bunch in the nest and it got to 11 degrees last night.

Billie,M my eggs sometimes freeze. Just bring them in and set on counter for a few hours. If they are cracked use right away if not put in fridge as usual. It got cold here also where are you from? Indiana Here.

Billie, there is a link to a wonderful site called "Quackers Home Page" that has a lot of great info on eggs. The link can be found on www.poultryconnection.com. Also lots of good links to other egg info sites. As you know, egg shells are permeable(is that the right word?) and readily absorb gasses, odors etc and also will hold bacteria so freezing the eggs sans shell is safest. It must be really cold still in your neck of the woods. Durn! My daffodils are blooming! LQ

sometime my hens lay eggs outside,, one loves an old box,, and if I dont catch it soon enough,,it may freeze and crack,, at that point, I just smash it for the hens to eat,,if the shell isnt cracked,, its fine

If the eggs are still frozen when you gather them then just put them in the refrigerator. Any that are cracked should be used quickly. Uncracked eggs can be kept for a while. If they really did freeze I don't think I'd store them unrefrigerated after they thawed because the ice crystals can disrupt all kinds of things inside the shell.
