I'm overflowing in eggs, and have looked all though my cookbooks for a pickle egg recipe. I've never made them before, but hubby & I sure so love them. Does any one have a good pickle egg recipe they could send me? Thanks

Here's a few! Hope you find one you like!GARLIC PICKLED EGGS
24 eggs, hard boiled and peeled
1 T dried tarragon or 4 sprigs fresh
24 cloves garlic, slivered
1 1/2 quarts cider vinegar
1 teaspoon mustard seed
2 bay leaves
1 teaspoon cardamon seed
2 teaspoons black peppercorns
2 teaspoons salt
1 1/2 tablespoons sugarPack the eggs in jars and divide tarragon and garlic evenly among them. Combine remaining ingredients in a pot and bring to a boil. Simmer gently 15 min. Strain hot vinegar over the eggs. Seal and process 10 min.
PICKLED MUSTARD EGGS
12 hard boiled eggs(peeled)
2 tablespoons yellow mustard
1 cup sugar
2 cups vinegar
1 tablespoon salt
1 tablespoon celery seed
1 tablespoon mustard seed
2 onions(sliced)Simmer all ingredients except eggs and onions for 10 min.Put onions and eggs in a large container.Pour mixture over eggs and onions. If mixture is too strong add water. Cover and refrigerate over night.
RED BEET EGGS
4 cups white vinegar
2 cups sugar
2 tsp. salt
2 dozen hard-boiled eggs (shelled)
2 large cans of red beets with juiceIn saucepan bring the vinegar, beet juice, sugar, and salt to boiling. Remove from heat, add eggs and beets. When cool, place in a container and refrigerate. Leave in refrigerator for two hours before eating, eggs get better the longer they sit in juice, although they will start to get rubbery after a week.

we do pickle eggs with a mix of 1 cup water 1cup cider vinegar and 1 cup of sugar. if you want you can use the juice from a can of beets as part or all of the water add the beets and have pickled eggs and beets they will keep for a long time out of the refridge and longer in the refridge...ron in ny

Well, now I just MUST try pickling some eggs. These all look very interesting and good!!! Leaving tonight's eggs out on the counter so I have some to hard boil. Will my husband ever be thrilled.
