Making nut butter--need help

greenspun.com : LUSENET : Cooking & Crafts : One Thread

I am in the process of making almond butter. I am using a Champion juicer and it has worked so far, but the butter seems very dry and my machine gets very hot. I do not want to overheat it. Should I have purchased almond oil and added it when I was grinding the almonds? I tried breaking the whole almonds up in my blender to see if that would help, but did not notice a big diffence with the machine. As far as the dry almond butter, do you add the oil after it is ground?? Has anyone tried sesame seeds to make tahini? Sorry, about the zillions of questions, but I really want to get the hang of it.

I make peanut butter in my Vita-Mix and I add peanut oil as I blend the peanuts. I also run it for a few minutes and then turn it off to let the machine cool. I repeat until the butter is smooth.

Marie, I make almond butter in my Champion with no trouble. I have noticed that the beginning of the butter comes out like your said, but soon turns smooth. I lightly toast my almonds, then let them cool befre I grind them. I have tried it while they were hot before, and it just doesn't work. I have never added almond oil.

I also make almond butter, I do not toast them first, just put them in the food processor raw and as they begin to break up start adding a drop or two of extra virgin olive oil, continue until you get the consistency you want, I just made some and it was excellent, we spread it on raisin bread for the treat of a lifetime.

Hope this helps.
