Low Fat Tex-Mex Tortilla Soup

LOW-FAT TORTILLA SOUP

This is a healthy family favorite - my own recipe.

3 cans of low-fat chicken broth 3 or 4 boneless chicken breasts with skin removed, cut into 1" strips 1 med. onion, chopped 1 16oz. can chopped tomatoes (undrained) 1 sm. can of green chilis 1 16 oz. can corn, drained Tortilla Chips low fat grated cheese of your choice 3 Ripe Avacados, sliced (optional) 1 tbsp. olive oil 1 tsp. cilantro 1 tsp. parsley 1 tsp. worcester sauce 1/2 tsp. cumin dash of garlic salt red tobasco sauce to taste

In a large pot, brown chicken pieces in oil for a few minutes, then add remaining ingredients except for cheese, avocado, and tortilla chips. Take a handful of tortilla strips and crush and add to pot. Bring to boil and cook over medium heat for about 20-30 min.; tortilla chips will mostly dissolve. Place sliced avocado, additional tortilla chips, and cheese in serving bowls and ladle soup in. You can add water or more broth to the pot to make it go further if you want. Serves 5 or 6. Great with warm flour tortillas and salsa. Enjoy!

My recipe is much the same, but I add sliced zuchinni and yellow squash. Also, can top with some diced green onions.

I don't put cheese in mine to save calories for flan.
