Vegetable Soup....lower calorie...lower carbs... : LUSENET : Cooking & Crafts : One Thread

In a large 8 qt. soup pot:

1 frozen mixed vegetables 1 can Ro-Tel tomatoes (tomatoes with jalapeno peppers) 1 can Italian stewed tomatoes 2 bay leaves sprinkle of Basil Sprinkle of Lowery's Seasoning Salt or sodium free 1 large onion chopped 1/2 head green cabbage sliced, cross cut 1 pkg. dry Lipton Onion Soup (optional) this is high sodium 1 soup bone (bone with marrow in center and little meat) Water to cover about 3 or 4 inches.

Bring to boil then add soup bone, turn heat down and simmer for 1 hour.

Serve with dollop of Picante Sauce if desired. Use "mild" for a lighter fire touch or "medium" for a hot touch of soup.

Also good with grated cheddar cheese on top.

Note: May substitute another can Italian stewed tomatoes for the Ro-Tel tomatoes if you do not care for spicy hot soup.
