3 cups all-purpose flour (I used unbleached)3 teaspoons baking soda
4 1/2 teaspoons baking powder
1 1/2 teaspoons salt
2 cups whole wheat flour or oat flour (I used wheat)
1 cup 7 grain cereal (I didn't have this so I just used about 3/4 cup whole oats..)
1 cup cornmeal
4 tablespoons whaet germ
Mix until throughly blended, storein airtight container, if using whaet germ, keep in firg. I put mine in the freezer.
To use: Lightly beat one egg with 1/2 cup of yogurt, buttermilk, sour cream, or milk (Just one of these) Add 1/2 cup pancake mix.

Mellissa, You ought to be really healthy, Are these pancakes light and fluffy. I enjoyed reading your veg. soup recipe on u v post. I don"t have the venison, But could use meat of some sort. I needed a recipe I could use for canning, And that sounded like it would be enough.

They are somewhat grainy but still light and fluffy. I used buttermilk and I think it usually makes them light.I had to go before I finished the post (a tax customer showed up unexpectedly!)
I just wanted to say that I tripled this recipe when I used it, and only used 2 of my fresh eggs as they are rather large. I am going to experiment with using less white flour and see how it works out.
I usually try a recipe the way it is written the first time and then play around with it later.
I got this recipe from Disney's Family Cookbook which has lots of good kid-proof recipes! If you get a chance check it out at the library.
