Unfortuanatly, there is no good substitute for cream of tartar. Cream of tartar is chemically called potassium hydrogen tartrate -- an acid powder. It serves as a stabalizer for the egg white. In other words a chemical reaction occurs to keep the egg whites fluffed up.

However,a pinch of salt will also act as a stabalizer, but just not as well. I think it is worth a try. Worst thing that can happen is that your cake does not rise quite as much. In other words the whites won't hold up as well as they normally would with the cream of tartar, but you won't get a total collapse either.
