source for sausage casings

greenspun.com : LUSENET : Countryside : One Thread

I'm looking for a source of sausage casings. I've tried many of the local grocery stores... no luck. Then I started visitng the local butcher shops. They all wanted to sell me an entire hank of casings or enough to make 100 lbs of sausage. The hank was basically a sealed bag full of casings.

Any ideas on where I could get just enough casings do make 5 to 10 lbs worth of sausage at a time? Thanks... otter

No such luck my dear! However they will store for a very long time if you make sure they stay salted (like they come) and throw them in the freezer. Then you can make 10 pounds every year! Or try finding a freind to 'share' them and the expense with?

You could try asking a local restaurant and see if the foodservice companies can order them.If anyone is in tight with a local restaurant this is a great way of buying in bulk.I am the kitchen manager and chef of the restaurant I work at and I wouldn't have a problem if someone wants to order something. You would be amazed at the VERY low prices that is paid for some things, for example imported dijon mustard 9Ib's for $10!!!Of course they might not like YOU knowing just how little they pay LOL

Did a search and came up with this site: Sausage Casing "links" Now while it seems they STILL only sell casings for 80-100 lbs of meat, considering the price, between $8 and $20 thought I would post this for others who might be interested.

No help in finding natural casings but I will tell you that we "case" our sausage in unbleached muslin, sewn to the size you want in the lengths you want, and it works very well. We've done that for 40 years and my in laws had been doing the same for eons before. It works.

I get a catalog called The Sausage Maker and they have lots of different kinds of casings. I couldn't find an Internet Address but the phone number is: 1-888-490-8525 for orders and Customer service is: 1-716-824-5814. Good luck.

www.eldonsausage.com is where I get a lot of my supplies from. They have hog casings, sheep casings, collagen casings, and fibrous casings. The collagen casings(edible) are the smallest bulk you can buy. 1 strand, capacity up to 10#........$4.95.

They have other supplies to go with making your own suasage such as ring pliers and rings, suasage stuffers. I bought the water pack stuffer a while back and it does great. A little expensive but I believe it has already paid for itself.

Ask for their free catolog, it has a lot in it.

Allied Kenco has a great mail order business that specializes in meat-related products. In their catalog they list a dry pack of hog casings that will stuff 25 lbs for $3.00 They also have small quantities available of both collage nand plastic casings. Thy are located in Houston, TX. Their website is www.alliedkenco.com I have ordered from them several times, and I think that their service is great.
