What is your favorite Amish recipe?

What is it about Amish cooking that just starts making your mouth water? Maybe because the Amish have a knack for making anything taste so great. So what is your favorite amish recipe. (Please post the whole recipe if you don't mind taking the time to do so).

We Enjoy the Amish and have friends from Penn. We like this receipe very much. BREAKFAST CASSEROLE 1lb sausage or ham 6eggs 2C.Milk 3 slices toasted bread 1C.grated cheese 1 tsp.salt 1tsp.dry mustard BROWN SAUSAGE;CRUMBLE AND DRAIN, BEAT EGGS WITH MILK, SALT AND MUSTARD,LAYER THE SAUSAGE,BREAD AND CHEESE IN BAKING DISH, POUR EGG MIXTURE OVER TOP. REFIGERATE OVERNIGHT, BAKE AT 350 FOR 45 MINUTES ENJOY VERY GOOD HAVE MANY MORE AMISH RECIPES WIILLING TO SHARE. BRENDA The Farm

We like rivels - Amish dumplings. Use a fork to beat one egg in a bowl. Add 1 cup flour and a dash of salt. Use fork to blend until you have coarse crumbs. Stir in 1/4 cup milk until you have a dough (will be sticky). Use 2 forks to pull off small pieces and drop them into boiling soup. Cook a few minutes, they'll float when done. You can use these in any soup. I made chicken and rice soup last night and my DH said "Where's the rivels?"! Two good Amish/Mennonite cookbooks are: "From Amish and Mennonite Kitchens" and "Mennonite Recipes from the Shenandoah Valley".

It is oh so good but oh so fattening when you have no conrol snitching a piece here and there!!
