Aperture control on ETTL flash

When I set my Elan II/Sigma EF-500 in the full auto or program mode, the system defaults to 1/60 and a wide-open lens, in the ETTL mode. I would like to take auto exposures with a stopped-down lens for greater depth of field (F/8 or 11). When I switch to the aperature priority mode, and fix at f/11, the camera returns a shutter speed of 1-2 seconds to get a proper exposure on the background, with the flash lighting the subject. This is not what I want ..... I'm looking for an ETTL exposure at 1/60 and f/11 with the camera controling the flash output. How do I do it ???

Yes, as the above poster pointed out, M mode is the best way to do it. The flash will give you a correct exposure just as long as you're within flash range. If you use small apertures the range really gets tiny, so be careful with F11 and smaller.

Another way is to set a custom function that locks the shutter speed at the highest flash sync speed (1/125) in Av mode. I can set this CF on my Elan 7, A2 and EOS 3, so the Elan IIE probably has the same CF.

I am not too sure that the EOS 3 has a CF to lock the sync speed in AV mode. But, I know that the Elan II does.
