The original Monte Cristo sandwich: 3 slices white bread 1 ounce each, deli turkey, deli ham; slices 1 ounce each, Swiss and American cheeses Butter all inside faces of bread, put a meat and cheese on either side of this triple decker. Sandwich is sliced diagionally twice making 4 little triangles, spike together with toothpicks. Dip in to flour, egg, milk batter; deep fry until good color Remove toothpicks, coat with confectioners sugar Calories are our friends.

Oh, Mitch, you make me laugh-though that sandwich sounds great!

My contribution is MEATBALLS! We love them, and they are versatile. This is how I make them:use a pound of ground beef, and a pound of ground pork-you can use all beef. I run it through the food processor a while until its ground very very fine. I throw in a scant cup of finely ground breadcrumbs, some onion a little nutmeg, and a couple tablespoons of milk. If you are in a hurry, you can form them into little balls, put them in a baking pan and bake at about 350 for about 20 minents-half an hour, and they are good, they are better, if you simmer them in almost boiling water, them brown them in butter in a skillet-but that takes time. This makes a lot, I usaully freeze some.

To use: You can take the drippings from the pan or skillet, and make a gravy, use sour cream instead of broth and toss your meatballs in and you have "Swedish" Meatballs. You can drop them in some beef stock for meatball soup, or make the soup and add vegtables for vegtable soup. You can add them to sphegghti for Sphegghti and meatballs, or make meatball subs, theres tons of ways to use them.

When I first saw this recipe, I thought it sounded really disgusting! But, my MIL told me she had made them before and they were really good, so I gave 'em a try and they are DELICIOUS!!!!

Mayonnaise Biscuits
(Makes 1 dozen)

2 cup self-rising flour
1 cup milk
1/2 cup mayonnaise or salad dressing
2 teaspoons sugar

Combine all ingredients, stirring just until dry ingredients are moistened. Spoon batter into greased muffin pan, filling 3/4 full. Bake at 425 degrees for 15 minutes.

Meat loaf { Lubys cafeteria reciepe]

2 1/2 pds Lean ground beef, 3/4 pound lean ground pork, 3 lg eggs,3/4 cup chopped onion, 3/4 cup chopped celery, 1/2 cup chopped bell pepper, 2/3 cup tomatoe juice, 1/3 cup evaporated milk, 3/4 cup crushed saltine cracker crumbs, 1 teas. pepper, 1/2 teas.garlic powder,1/2 teas salt. Heat oven to 350, lightly grease large shallow baking pan. In large bowl combine all ingredients. mix well, In baking pan, firmly shape meat mixture into loaf. cover loosely with foil. Bake 1 hour. Remove foil and continue baking 5 min. enjoy Irene

Macaroni and cheese

8 ounces [ 2 cups] dry elbow macaroni, 2 tablespoons nonfat dry milk, 2 tablespoons all-purpose flour, 1 tablespoon butter or margaring, melted, 1/14 cups boiling water, 3 cups shredded american cheese.mild.1/4 teas salt.

Cook macaroni according to package directions, Drain. Heat oven to 350. In large bowl, mix dry mild, flour, and butter, Gradually add boiling water, beating constantly. Add 1 1/2 cups of cheese and continue beating until smooth and creamy. Stir in macaroni, ! cup of remainging cheese, and salt. Transfer to lightly greased 2 quart bakeing dish. Cover with foil Bake 25 mins,Remove foil, Sprinkle remaing 1/2 cup cheese on top. Continue baking 1 min. or until cheese melts. OPPs Thats mix dry milk, not mild. and flour. Irene

Peel eggplant and slice thinly. I don't bother doing the soaking and draining of the eggplant like some do (too lazy). Make a white sauce with at least two cups of milk. Add one tbsp parmesan cheeses and a tsp of garlic powder. Salt and pepper to taste.

Put a little white sauce in the bottom of a casserole dish. Layer in this order until you top with remaining white sauce: eggplant slices, cooked ground beef, white sauce.

Bake for an hour at 350 degrees F.

Enjoy with a salad and bread. Home made and grown if you can!
