Help, lost my zuchinni bread recipe

greenspun.com : LUSENET : Countryside : One Thread

This summer I got a recipe off this board somewhere for zuchinni bread and now I've lost it. I've looked everywhere on the board for it and can't find it. It was the BEST zuchinni bread I've ever made. All I remember was it made 2 large loaves and cooked for an hour. The bread dame out nice and moist. Does someone remember posting this recipe and can they repost it? Pretty Please???

Hi Stacia,

I don't know about the recipe on this forum but here's my Mom's zucchini bread recipe. It's the best one I've ever tried.

Zucchini Bread 3 beaten eggs 2 tsp. vanilla extract 1 tsp. salt 2 cups grated zucchini 3 cups flour 1 cup chopped nuts (optional) 1 cup salad oil 1 tsp. baking soda 3 tsp. cinnamon 2 cups sugar 1/2 tsp. baking powder

Beat the eggs until light and foamy. Add sugar, oil, vanilla and zucchini; mix lightly. Combine flour, salt, baking soda, baking powder and cinnamon; add to zucchini mixture. Stir until well blended, then add nuts. Bake at 350 degrees in loaf pans for 1 hour.

Hope this helps.
