I have been slowing these down a little as I know everyone is busy getting ready for the Christmas Holiday.I can't even think of anything that starts with K right now! We were up past midnight, building a mousetrap/rubberband powered car!!!

I didn't think I had any K's, but I found one! Enjoy!King Ranch Chicken
3 pounds chicken (I use cheap legs etc it’s easier)
1 med onion diced
1 rib of celery diced
2 1/2 teaspoon salt
1/2 cup water
1 dozen soft corn tortillas cut in 1" width strips
2 cups grated cheese
1 cup chopped onion
1 can cream of chicken soup
2/3 cups Rotel tomatoes
Tortilla chips and green peppers for decorationStew chicken with 1st onion, celery, salt and water. Cook till done about 1 1/2 to 2 hours covered. Save 1 1/3 cups of broth when done. Cool chicken and cut into bite size pieces.
Blend soup, Rotel, broth and 1/2 tsp salt. Heat until smooth.
Layer: chicken, tortillas, cheese, Onions, sauce(soup/rotel mix)and cheese. Decorate with tortilla chips and sliced green peppers. Bake at 350 for 35 to 40 minutes. Serve immediately.
