Date Nut Pinwheel Cookies

Makes three batches of dough. Dough can be frozen until needed. Makes 5 dozen

1 cup butter
2 cups packed brown sugar
3 eggs
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla extract
4-1/2 cups all-purpose flour
1/2 pound dates, pitted and chopped
1 cup chopped pecans
1/2 cup water
1/2 cup white sugar

Directions

1. Cream together butter or margarine and brown sugar. Add eggs, one at a time, beating well. Sift together cinnamon, salt, baking soda, and flour. Add dry ingredients to egg mixture slowly, mixing well. Add vanilla.

2. Divide dough into three portions and place on waxed paper. Chill until set.

3. While batter is chilling, make filling. Combine dates, chopped pecans, water and white sugar over low heat. Heat until filling is of a paste-like consistency.

4. Roll dough out to make a thin layer. Place 1/3 of filling on the dough and roll up. Repeat the process for the other 2 sections of dough. Rolls can be baked right away or frozen until needed.

5. Preheat oven to 350 degrees F (180 degrees C). Cut 1/4 inch slices off of rolls with a sharp knife. Place slices on greased cookie sheets and bake for 15 minutes.

Dumplings 1 cup flour use with stew or chicken in dumplings 2 t. baking powder 1/2 t. salt 1/2 cup milk 2 T. salad oil mix dry ingredients. Combine milk and oil; add to dry ingredients,stirring just till moistened. Drop from Tablespoon a top bubbling stew or chicken gravy. Cover tightly; bring to boil. Reduce heat(don't lift cover); simmer 12-15 mins. or till done. Makes five servings. This recipe can be doubled. Recipe from Better Homes and Gardens Cookbook.

Sorry above recipe came out different than I printed it........ 1 cup flour should go with recipe. Stew and chicken in dumplings should be on another line.

Dump Cake

1 large can cherry pie filling, 1 large can crushed pineapple (with juice), dump each into 9 X 13 inch baking dish. Top with 1 box of yellow cake mix. Spread each layer evenly as dumped into dish. Put slices of 1 stick of butter on top, and sprinkle with nuts (opt.). Bake 350 degrees for 35 to 45 minutes.
