How do you spice up your homemade sausage?

we purchase some bulk sausage, but I don't season it until am ready to use it. Then I will add sage, salt and pepper for a country type, Italian spices, fennel, garlic, and red pepper for Italian, or maple syrup for breakfast sausage. Sorry I can't really help with amounts, I just sprinkle in what I think "looks" right, it is best to put less rather than more!!!
