I just fixed a big pan of Lasagna!! It smells so good. I browned some sausage from a wild hog, with some onions, fennel garlic and red hot pepper. Then I layered the noodles with home made sauce, provolone and mozzarells cheese, and the sausage-onion mixture, and some mushrooms. I blew the budget on this one, spending $3.00 on cheese. Lasagna noodles were on sale for 50 cents. Sausage, onions and sauce were free. Going to add a salad from my hot-bed, with some home-made dressing and a gallon of blackberry ice tea. I know there will be enough lasagna left for another meal. But my total cost for the meal is about $4.00!

Hmmm-sounds great Melissa! Tonight, I'm serving Spanish Rice-some weeks ago our local grocery had ground chuck on sale for $1.49 lb and I bought several "family packs" I'll use about half pound ground chuck, left over rice from thursday, onions and garlic and tomato paste. I bought a package of broccoli for $1.39 and will use about half of that, I'll make biscuits from scratch, use up the rest of the cole slaw from the other day-I don't know about dessert yet. We had a HUGE family meal last night with Grandparents, so tonight its kind of "Throw-together" I'll guess my cost is about $3.00.

It was Mexican night! Ann cooked some sliced chicken breasts, and made a chili sauce with onions an sweet, garden grown red peppers. We added shredded lettuce , sour cream and salsa for delicious burito's. Total cost: $4.75 to serve 3.

Spaghetti, garlic bread, garlicky parmesan green beans, sweetened iced tea, salad with cherry cake for dessert. Green beans, carrots, green pepper, tomatoes homegrown. Garlic bread and dessert brought by in laws. Can't get cheaper than iced tea. Pasta--79/box @3 boxes.

Good, cheap and the kids will eat it. Hurrah!

We turned cold, so I made a pot of chili, My reciepe is simple, two pds ground chuck, a 8 0z can of tomatoe sauce, and two cans of water, I add cumin, paprika,chili powder,salt, maza flour, about a tablespoon of cumin, a teas. of paprika, and as much chili powder as you want for heat, salt to taste, and about two tablespoon of masa flour which gives it a nice texture, let simmer on low flame for about two hours, oh yes brown meat before adding other ingredients, we eat it with crackers. I made it yesterday and we will be eatting it for a week. When it gets cold I make a big pot of home made beef soup. It starts with 4lbs of beef 6lbs of onions and then I add everything I can get my hands on. LOL It sure is good with a little toasted french bread on the side.

Nothing to creative here! 1 box of Mac & Cheese, !/4 cup Milk, 1/4 butter. Prepare Mac & cheese per direction than add 1 can Cream of Mushroom Soup, 1 can Tuna. Should be enough for me for Supper and tommorow's Breakfast. Total cost $2.17

Maybe I will try something exciting like Lasanga tommorow, that should feed me all week.

Another single guy here. I had roast beef, mashed potatoes and gravy, cooked carrots and salad. Can you tell I didn't eat at home? ;o) Ohhh... the 'cost' has yet to be determined, but we're negotiating...

And now a few words from a single guy who can cook; 2 chicken thighs, skinned, basted with plane yogert, sprinkled heavily with poultry seasoning and then dipped into crushed saltines, rebasted with Kikkoman Teriyaki bast & glaze and dipped into crushed corn flakes, baked for 30 minutes at 350. Add a cup of yellow rice with a light sprinkle of honey mustard and some frozen stir fry veggies to round out the plate.

4 boneless chicken breasts( I have them thinly cut) . The mixture.. sour cream (almost room temp.) lemon juice, worchister sauce, salt, pepper, galic powder. mix them all togther. put the miture in a glass cookie pan , add the chicken to the marinade (making sure they are completly covered). put in refrigerator over night ... next day take the pieces out and dust them with bread crum. put them in a new pan and bake 350 degrees for about a hour or so covered.... i learned this reciepe in speech class ...
