Does anyone know of any resource regarding poses and placement of subjects? I would really like to find a book, website, catalog, or magazine that has examples or suggestions of poses and props for outdoor portrait photography.

Try and have a look at a book called "The Photographers Studio Manual by Michael Freeman and published by Harper Collins. It has an ISBN code of 0-00-412629 -7. My edition was published in '92 so you should be able to find it second hand. Try the abs website for second hand books.
