Dehydrating Potatoes

How can I keep pototoes from turning brown if I dehydrate them?

Hi Julie,

I successfully dried potatoes. Slice them thinly, soak them in cold water, then blanch for 3 minutes and arrange on your drying box until they're dry. Store them carefully so they don't break up. These come out like the ones you see in the prepacked potato mixes you can buy. Hope this works for you.

Soak them in water and lemon juice to keep them from turning brown. I've done this for years and have always had good luck. Don't forget to slice them thin. Sally
