another freezer question

my gosh, at the rate that we are all asking freezer questions, pretty soon we should all be experts :)

my question is about freezing grains. everything i have read says to put flour, cornmeal, etc in the freezer for a few days to kill any bugs, then put in air tight containers. is there any reason why one could not just leave these in the freezer?

it could pick up a smell/taste form other foods. If its not a frost free,, it could pick up moisture a little at a time. but other than that,, no reason why ou couldnt

You could always vacuum-seal the package in plastic before freezing-- that would take care of the odor problem

I store some of my flour in the freezer. I leave it in the orginal container (for the 5lb bags) and double bag it. For my bulk flour, 50lb bags, I stick it in the freezer for a few days then take it out.

I have never had an off smell or taste from the flour I keep in the freezer for long periods. Just make sure it is wrapped and sealed well.

When winter comes, I just put stuff on the porch for a few days to freeze what ever might be in the grain.

I suspect that it is more a function of using up freezer space unnecessarily rather than what it would do to the flour. I freeze mine and then take it out just because I don't want to use up the freezer space and I know it doesn't have to remain in the freezer in order to preserve it.
