I am looking for canning time tables for 1/2 gal jars for homemade soups and stews. Can anyone give the information or point me in the right direction? My direction book that came with my canner only goes up to quart jars. ( presure Canner)Thanks in advance Terry

I couldn't find any info in the newer canning books but I found this in an old KERR Home Canning Book: When canning vegetables and meats, for half gallons in pressure cooker or water bath, increase time 20% over time for quarts. Remember that stews & soups have to be pressure canned for the food that takes the longest amount of time. Hope this helps.

I believe the reason you can't find times for 1/2 gal jars is that they are no longer considered safe for anything other than juices. Apparently, they are just too big to be sure the food in the center gets adequately processed. This is what I've read, no personal experience.

What I'd like to know is, where do you get a canner deep enough for the taller 1/2 gallon jars? I have jars, but no canner big enough.

Here is what I found in an old Kerr book.If canning fruit in water bath with half gallon jars add 10 minutes to given time. For half gallons in pressure cooker or water bath increase time 20%.
