We have some horseradish roots we would like to dig. Is there anyway to preserve them other than grinding and freezing or grinding and putting in the refrigerator? We were wondering if they could be canned like in pickling and stored in our cave.

Nancy, this came up recently. I think if you look down at the threads at the bottom of the main page you'll find it under kitchens/food preservation-other. I don't know why I remembered it but I guess horseradish is memorable stuff! :)
