I LIVE IN MIDDLESEX COUNTY, NEW JERSEY AND WISH TO TAKE CLASSES IN CHEESEMAKING, WINE MAKING, COMPOSTING, ETC. CAN ANYBODY POINT ME IN THE RIGHT DIRECTION?

Do it online, right here at the Forums. The discussions here combined with the older thread catagories will give you an education as good as any classroom. We got cheesemakers, goat raisers, wine makers, master home canners, gardners, chicken farmers and we got a bunch of composters. And we even have a textbook available for our studies ... Countryside & Small Stock Journal. I have learned probally 2/3 of what I do from here and with the boards and their magazine you do it at your own speed. The certificate of completion is the satisfaction of bringing in the crop or finished product.

I have some dear friiends in VA who do this type of instruction. I don't have their e-mail addy handy but their dairy is called drinking Swamp Farm, should come up in searches. They make cheese, fudge, etc and hold workshops. hope this helps.
