Unusual pickling recipes?

Have you tried playing around with the standard pickling recipes in the Ball Blue Book? I have summer squash aplenty, and I'm going to put them in the juice for bread and butter pickles, prepped exactly the same way as I'd do cukes. How bad can they be? Well, I'll let you know! Have any different recipes to share?

Dear Cathy, are you loaded with zucchini? Here is a zucchini relish recipe. 5 cups finely chopped zucchini, 1 1/2 cups finely chopped onion,1 med.green sweet pepper, finely chopped {3/4 cup} 1 med. red sweet pepper, finely chopped. 1/4 cup pickling salt, 1 3/4 cups sugar,1 1/2 cups white vinegar, 1/4 cup water. 1 tsp.celery seed,1 tsp.ground turmeric 1/2 tsp.mustard seed , In a Large nonmetal bowl, combine zucchini, onion, and sweet peppers, sprinkle the pickling salt over the veg. pour enough water over to cover veg. cover and let stand for 3 hours. transfer to a colander, rinse and drain well. In a 10 quart dutch oven or pot, combine sugar, vinegar, the 1/4 cup of water,the celery seed , turmeric and mustard seed. bring to boiling, reduce heat, Simmer uncovered, for 3 min. Stir in the drained veg. Return to boiling reduce heat, simmer uncovered, for 10 min. Ladle relish into hot ,sterilized jars,leaving 1/2 inch head space.remove any air bubbleswipe rims and adjust lids. process jars in a boiling water canner for 10 min. start timeing when water begins to boil. remove Jars cool on rack. makes 5 half pints; Sweet pepper relish, 6 med green sweet peppers, 6 med red sweet peppers, 3 med anaheim, or any mild banana pepper, 4 med. onions, 2 1/2 cups sugar 1 cup white vinegar 1 tablespoon salt, core and seed peppers,cut onions into 1 inch pieces, In food processor or food grinder, process the pepper mix. a little at a time till all chopped. place in large bowl,pour enough boiling water to cover,Let stand for 15 mins. drain well, in a 5 quart pot, combine the sugar,vinegar,and salt. Bring to boiling, boil rapidly for 5 mins. remove from heat. Immediately ladle into hot, sterilized jars,wipe jar rims and adjust lids,process the filled jars in a boiling water bath for 10 mins. for the pints or 5 mins, for the half pints. makes about 4 pints . Cathy, Irene gave you my favorite relish recipe. The first one. You can substitute yellow squash. Especially the ones that get too big. I scoop the seeds out and grind them. You can also use cucumbers that get to big for salad. It all tastes the same but looks slightly different. Sometimes I grind up two or three jalapeno peppers to make some of it hot.
