I have some very prolific Ichiban Eggplants and have no idea how to put them up for use in the winter. Can I freeze them and whats the best way? Any help would be appreciated,(forgive spelling please). Thank you all for any help.

Wynema, I freeze mine in slices on a cookie sheet and then put it in freezer bags. Another thing I do is make huge amounts of eggplant parmesan (our favorite way to eat it) and freeze it in amounts sufficient for a meal.

is this the same as regular eggplant? must it be blanched before freezing?

Diane what is eggplant parmisan? I am pretty new at all this.

Eggplant Parmesan means different things to different people. The way I make it is kind of like lasagna but use eggplant instead of the lasagna noodles. Some people don't use meat, sometimes I do, sometimes I don't. I have liked it really well with just spagetti sauce and parmesan cheese. It is baked, then you freeze it to just be warmed up. Have you ever eaten eggplant??

Lol I had my first eggplant Monday(fried). My father grew up on farm in depression he thought that gardens were for poor people. Therefore the only vegetables I had growing up came from grocerys in cans and I've never seen eggplant in cans. So i started gardening kind of late in life and this is the first year for eggplant. Thank you for your help.
