greenspun.com : LUSENET : Countryside : One Thread

I have a juicer and many many tomatoes. I am having trouble finding the step by step procedure for juicing my tomatoes properly and then freezing the juice for later consumption. I may not even need to freeze the juice to preserve it after juicing??? Help and help soon...please

shannon..........you might want to consider canning it in one quart jars. Would save an awful lot of freezer room.

I am not sure what you imagine you need to do to tomatoes before freezing, but I do know that a juicer won't freeze anything. You can simply puree tomatoes in a blender and freeze them in ziploc bags. It can be that simple. Thats what we do. Good luck.

Blanching makes the skins easier to remove, if you do that.

If you have the freezer space you can freeze your tomatoes right off the vine. After years of trying to can in 90 degree heat and working full time I was ready to give up. Then I got the bright idea to freeze the tomatoes whole and can them at a later date. I take the plastic grocery bags and double them, pick tomatoes and put them in my chest freezer. When you are ready to can put the tomatoes in cool water and the skins will peel right off. You can do whatever with them after that. Juice, sauce, whole tomatoes, etc. I will never can in august again.I usually start in November when it is cold and I want the stove going to add heat to the house plus the aroma is great when you come in and smell fresh sauce cooking.

Freezing whole tomatoes is easy. If you're only going to want one or two at a time, though, you have to wrap them individually when you freeze them. Otherwise they stick together and have to be pried apart.
