Wife's Biscuits are Lethal Weapons

OK to be fair there not lethal. But they are usually either half done or brick hard. I've read that flour has changed a great deal over the past couple years.

What flour do you use? What is your recipe for great biscuits?

Handling biscuit dough too much will make them like weapons in a snowball fight. Biscuit dough is by nature soft dough...knead it as little as possible...I am sorry I cannot give my recipe because I have been making them so long, I just throw stuff together without measuring it out. Perhaps someone else can help with that, but the basci premise will be the same. I use plain old unbleached white flour, nothing fancy...God bless.

Could be the shortening that is causing the trouble. I swear by butter flavored Crisco. I bought some store brand or nother and my bisquits went south in a bad way.

Here's the best bisquit recipe ever...just don't tell my Dad!

Peg's Bisquits

2 cups flour

1/2 tsp salt

1 tbsp baking powder

Stir well with fork...2 minutes or so

1/4 cup GOOD shortening

Cut in with fork really well

Put 1 egg in a 1 cup measuring cup. Put in some milk and stir well. Fill the cup the rest of the way with milk. Pour it on the dry stuff.

2 tsp honey on top of that

Mix it up

This is some gooey stuff. The fork will become useless. Get messy.

Turn out onto floured surface

Flour top Pat down to 1/2"

Cut your biskeys

Preheat oven to 450...bake until golden brown...8-10 minutes. Let rest for five minutes and then devour;)

My wife (and me and my daughter) Thank you. She admitted to over kneading the dough. After reading your post she had a light bulb moment. Her batch this morning was not only purty but very tasty.

The lazy (harried) woman's biscuits:

2 cups self rising flour 1 teaspoon salt 1/3 cup cooking oil 2/3 cup sweet milk

Stir up until most of flour is picked up by the dough. Knead (in the pan) 10-12 times. Pinch or squeeze off the biscuits and place in a cake pan. Bake at 450 degrees until brown, about 15 minutes.

Life is short, and there ain't no time for all that rollin' and cuttin', especially when the kids just eat up the evidence of the work anyway. LOL
