Need recipe for Key Lime Pie

greenspun.com : LUSENET : Freedom! self reliance : One Thread

I guess there is a difference between Key Lime Pie and just plain Lime Pie, but I don't know what it is. I have access to some Key Limes now and would like the right recipe. Maybe someone in Florida visits this forum and has a good Key Lime Pie recipe. I'd really appreciate it.

Key Lime Pie 2 eggs, separated 2 - 3 drops green food coloring 1 15 oz. can sweetened condensed milk 1/2 cup lime juice (6 - 8 limes) 3 Tbsp. sugar 1 8 to 9 inch graham cracker pie shell

Beat egg yolks and mix throughly with milk. Fold in lime juice and food coloring if desired. Pour into pie crust. Beat egg whites until soft peaks form, beat in sugar gradually until stiff. Spread over pie and put under broiler until lightly browned. Refrigerate 3 - 4 hours before serving.

Key Limes are a type of lime. It would be like saying "I am going to make a tomatoe pie" or "I am going to make a Burpee Big Boy pie :)" Any really good lemon merengiue pie recipe will work, but you must have KEY limes to make it genuine. Can't see how many folks could tell one way or another. Vicki
