ok, here's my best recipe for pancakes. I rely on it for company.

2 cups self-rising Martha White flour, 1 Tbsp sugar, 1 egg, 1/3 cup oil or soft butter, 1-1/2 cups buttermilk or milk. (May take a little more liquid if using buttermilk, to get the right consistency.) Makes about 15 or 16 pancakes.

Dump all ingredients into a bowl, whisk together, and fry on griddle. Flip when the bubbles breaking in the center on top leave a little indentation behind.

I had an awful time making pancakes for my kids. My youngest son LOVED them. i tried and tried to make them and they would stick to the pan. then i figured it out. You need a thin batter, not watery, but thin, then have a hot greased griddle or frying pan ready. Pour batter into pan (I use a big 5 cup measuring cup to do this) and when it starts to bubble and get thick on the top, flip. Hope this helps.

Obviously you have a computer and know how to get on the internet. Just type in "pancakes" on the web search and you will probably get 30,000 pages to choose from. Whatever recipe you choose just remember that you can have a little tasty fun with pancakes. You can spread different flavored jellies on top, or slice up bananna's on top. I've seen people pour chocalate syrup and top it off with whip topping. Most of the time I just prefer mine with maple syrup on it. Oh yes! I have an Aunt who mixes cream of corn in her batter. I thought it was delicious when I was a kid, but the last time I tried making it, it didn't taste quit so good. Maybe I didn't do something right.

Ok, here is my recipe. It is a Pennslyvania Amish version.

1/4 cup apple cider vineager 1/4 cup softened butter or vegetable oil 2 large eggs or 4 small eggs 2/3 cup dry milk 1/4 cup sugar

Mix in mixer till smooth and well beaten. Then add..

1 and 3/4 cup water 2 heaping cups flour (I use a combination of White and wheat, or white and oat flour.) 1 1/2 tbsp baking soda 1 tsp sugar 1 tsp vanilla

Then fry on each side on medium or medium high heat. My kids love to add chocolate chips to the batter. We also like them with freshly whipped cream on top.

Very basic pancake mix- 2 1/2 c. flour 1 Tb double acting baking powder 1 1/2 tsp salt 2 Tb sugar 2 eggs, well beaton 2 c. milk 1/3 c. shrotening, melted

mix (or sift) togather dry ingredients into large bowl add eggs and milk to flour mix all at once-don't blend yet Add shortening and hand mix just until mixed (batter should have lumps)

Heat your griddle (I use 6 for electric stoves - medium for flame) until a drop of water sizzles and disappers very quickly. I use a 1/3 cup measure to make uniform pancakes. Grease your pan lightly (I prefer spray non-stick), then pour on your batter. Wait until bubbles form, and most have broken before loosening the pancake like an egg, and flipping over gently. Cook an additional 30 seconds (or until you peek and it looks brown on the bottom), then removed to a warmed plate. (I use the oven set to 200 degrees to keep mine warm)

This is a very basic receipe, but I like it. You can optionally add-

1 tsp vanilla &/or blueberries &/or sliced strawberries &/or dried cranberries &/or one very ripe squished bannana and some nuts &/or whatever else sounds good-as long as it isn't too wet

I've been told that the key to good pancakes is the baking soda as the rising agent and that to use a "MEDUIM HOT" griddle or pan (we always use cast iron for pancakes). Don't try to make them too large or to turn them before they start to "bubble". I could never make good pancakes until someone shared these hints with me. The other thing we always do is keep our blueberries/raspberries (or chocolate chips) frozen and add them to each pancake as soon as we pour it onto to the griddle rather than mixing them all into the batter, seems to work out much better this way.

WOW! What a great question and some terrific answers! I am gonna LOVE trying these recipes! I was gonna show my ignorance and tell you I just use Bisquick and follow the directions on the package except I like to add a little sugar and vanilla flavoring. Not Now! I start with either applesauce or a mashed banana or two, add a couple heaping tablespoons of ground flaxseed, a beaten egg, a splidget of cooking oil, (less needed because of the fruit) 1/2 to 3/4 cup non instant oatmeal, a little bit more than that of white flour, a heaping spoonful of baking powder, several heaping tablespoons of buttermilk powder and a package of chopped walnuts. Beat it all up with enough water to make a liquid batter-thinner than dough. You have just replicated (almost) International House of Pancakes Harvest Grain and Nut recipe.

This is our family favorite - - Beat 2 eggs, add 4 cups buttermilk, 1 tablespoon sugar, 1/4 teaspoon each nutmeg & cinnamon. Stir 3 cups flour with 1 teaspoon baking soda and 1/2 teaspoon salt. Add to liquid. Stir in 1 tablespoon oil or melted butter. Mix well, small lumps are fine. Follow everyone else's cooking instructions and enjoy!
