USES FOR BLACK CURRANTS

greenspun.com : LUSENET : Countryside : One Thread

I WOULD LIKE TO KNOW SOME USES FOR MY BOUNTIFUL BLACK CURRANT CROP. LIKE ARE THEY GOOD IN WAFFLES? JUICE RECIPES, EVEN I THOUGHT I MIGHT TRY TO MAKE SOME CHEWING GUM. BY THEMSELVES, THEY ARE QUITE TART, SO MAYBE SOME ADULTERATION IS NEEDED. ANY ADVICE IS MUCH APPRECIATED FOR THIS HEALTHFUL BERRY. THANK YOU FOR YOUR ASSISTANCE.

Black currants make great jam and wonderful juice. The Swedes (I grew up in Sweden) make a concentrated juice from black currants that they then mix with water, just like concentrated apple or orange juice here. I'll have to dig out my Swedish cookbook, so it might be a day or two, but I'll be happy to post a recipe or two. I don't personally believe they'd be good in waffles because they're so tart.
