I would also like a good recipe for spagetti sauce to can that doesn't require hours to cook down.

This is the recipe I have used for years. It makes 7 qts.

Spagetti / Pizza Sauce

12 onions 6 green peppers 1- 1/2 cups canola oil 1-1/2 tsp. black pepper 36 tomatoes ( skinned and seeded) 4 cloves garlic ( I use more but we love it) 3 Tblsp. salt 4 Tblsp. sugar 2 Tblsp. each: oregano, sweet basil, and thyme 12 bay leaves ( leave whole so you can strain them out) 5- 12 oz. tomatoe paste

Grind onions and peppers ( I use my blender on the "Chop" setting) Simmer the onion and pepper s in the oil add black pepper. In a LARGE pot place tomatoes, garlic, salt, sugar, herbs and onion mixture. Bring to a rolling boil. Add tomatoe paste( one can at a time and mix in throughly) Pour into canning jars and process in pressure canner for 25 minutes at the pounds of pressure needed in your area. This may also be frozen I always can a few pints to use as pizza sauce.

This recipe comes from " The Tightwad Gazette" Book 2. We love it and have had several people ask for the recipe. Enjoy !

I use a simple method for a quick sauce. Brown a pound of hamburger and salt(or sesoning salt like Lawreys) I use either fresh paste tomatos or canned tomato paste w/water when in a hurry. Chop up garlic and onion (I use different amounts depending on my mood. One clove to three, etc.) Add oregano, parsley, basil, and salt. That is it. Brenda

OK, I figured I would jump in here, this is my recipe I don't know amounts but will feed 5 people generously:

1-2 lbs hamburger or sausage any kind or both 1 can 29 oz tomatoe sauce-store or home canned 1 can 29 oz tomatoes-store or home canned 1 can 12oz tomatoe paste basil garlic oregano 1-2 bay leaves thyme if you like it 1-2 Tablespoons of sugarwhite or brown if you like it

Cook as long or as little as you like it. We no longer put the sugar and only use thyme when we have it. I have always used this recipe, made up myself! I like this recipe cause you can vary it any way you want. Sometimes I will use less of the tomatoe juce in the canned tomatoes cause I like mine thick. Sometimes I use a can or 2 of Ro- tel instead of regular tomatoes. You can use any kind of sausage or even chunks of beef like in chili. I think we have even used chicken. Spices can be done to your liking. Experiment and enjoy!

Spaghetti and Pizza Sauce

When squeezing tomato juice, catch the thickest pulp for sauce. Put in blender to smooth it out. For each quart of this thick sauce, use:

1 medium onion, chopped; 1 Tbsp chopped green pepper; 1/8 tsp garlic powder; 1 Tbsp dry oregano; 1 Tbsp dry basil; 1 tsp sugar; 1/2 tsp salt; 1/8 tsp pepper; 1/2 tsp cumin.

Mix all together, put into pint or quart jars, and process as for tomatoes.

I do what daffodyllady does. Catch that thick stuff!!! I don't put meat in mine to can........don't like to spend all that processing time but I put the meat in when I use it.
