jellies & juicers

The mulberries are almost in and I would like to know if I can use my juiceman juicer for making jellies. Would I need to add water or just the straight juice. I use the sugar-free pectin with alittle honey in my receipes. Has anyone ever used stevia in jellies

I used the white stevia extract powder in rice pudding and found the flavor somehow lacking. My solution was to add to 1/2 gallon of pudding about two heaping tablespoons of sugar. That put the "feel" right, and I still got off with WAY less sugar than I would normally use.

I don't know about a Juiceman, but my Acme got all clogged up when I tried to juice blackberries, so watch out. The Champion, of course, works great for berries, and just about anything else. Good luck!

Just put up 45 half pints of strawberry jam made with the sugar free pectin. I actually used just a little sugar to take the tartness out of it. You can make any kind of jam or jelly with this product as either sugar free or low sugar. I used one by "Ball" as well as one by "Mrs. Wages". I have also seen it by Surjell. It is really a great product. Keeping in mind that a standard recipe calls for sweetening 6 cups of strawberries with up to 9 cups of sugar."ugh!" It can be bought at Walmart or Kroger or any place that sells canning supplies Great product! Ria in Ky

I have used Ball's " No sugar Needed Pectin" for 2 years and it works great. Instead of 6 to 9 cups sugar I only use 1 cup honey. I just started using stevia and was wondering if anyone has ever made jelly with it???? I was planning to juice alot of my berries add some honey and can it for concentrated syrup for pancakes etc. and just add water when ready to serve. I also want to make "V8" juice to can with my juicer. Can this be done?????

I have had a Weck steam juicer for about 20 years. I juice all the berries after freezing whole what I think I can use through the year. I fill quart jars directly from the juicer and seal them. Then make jelly of it when gardening is over and I have more time. Also dilute the juice with 7UP sometimes for kids to drink, or make sauce with it. Have never seen the sugar-free pectin, but will look for it...would appreciate using and eating less sugar. Thanks, everyone for your tips on using this.

I'm fortunate enough to have an abundance of blackberries on my rental property. Last year I managed to buy a brand new $60 juicer for $12. I ran the 7+ gallons of picked berries through the juicer to make jelly. Worked like a charm. I thought the leftover pulp was a bit on the juicy side so I tried to extract more juice with a drip bag-wasn't worth it. I did save the pulp for possible future use in making wine.

The juicer also can in very handy when canning tomatoes. I just diced and juiced. I let the juice set to siphon off the water and added back the pulp. Worked out great for making a thicker sauce and saved tons of time in the kitchen.
